制作步骤
①把冬笋洗净,切成长4厘米、粗0.8厘米的小条,放入沸水锅内焯烫一下,捞出沥水。
②猪五花肉去掉筋膜,切成小粒;四川芽菜用清水洗净,攥干水分,剁成碎粒。
③净锅置火上,放入植物油烧至六成热,下入冬笋条炸呈浅黄色,捞出。
④锅内滗去余油,放入猪肉粒炒散至酥香,下入芽菜碎粒炒出香味,加入辣椒段炒出香辣味。
⑤再放入炸好的冬笋条炒匀,然后加入精盐、醪糟汁、酱油、味精调匀。
⑥待煸炒至冬笋条表面起皱时,淋上香油,出锅装盘即可。
